Nature recurring cycles have inspired our work since the early days. We only use seasonal products, never forcing but adapting to that cycle.
I love doing the shopping at markets, where I have learnt the most by talking with farmers. They taught me how to choose fresh products, follow the rhythm of nature and mistrust those people who would offer “out-of-season” fruits and vegetables. That is all about my philosophy.
I have allowed one exception, though: the ice cream shop is located nearby a primary school; after my several negative answers to children asking for the strawberry flavor in winter, I decided to stop seeing those sad faces and promised them that they would find that flavor for the whole year.
Needless to say, during law season we use strawberries best quality from our region greenhouse.
We only choose genuine and high quality ingredients; our country offers a large variety of products with designation of origin and we choose them to realise our ice cream, cakes and salty food like pasta and pizza. Just a few examples: Pistachio from Sicily, Amalfi lemons from Campania, strawberries from Terracina (a small city in Lazio region), wallnuts from Piemonte.
All that said, we like exploring exotic tastes, too, that is why we import fruits from India (Mango) as well as Peru (Hamazon chocolate).
It takes time and patience to obtain the perfect flavor: selecting the products, getting them ready to be further handled requires attention, experience and skills that we maximize every day during the whole production cycle. All the above has helped us organize ad hoc working processes for each single flavor that we offer to our customers throughout the year, and it is all 100% natural.
